- The ground is ploughed in alternate strips, leaving every other one grassed over.
- Entirely organic fertilizer.
- Harvesting mid July if necessary for maximum concentration of grapes.

- Complete de-stemming, fermentation with natural yeasts.
- Maceration: long, from 20 to 25 days at maximum 28°.
- Ageing: in cement tanks for 10 months, the press wine is matured in 4 year-old barrels.
- Production 20 000 bottles (75cl) and 700 magnums.
- Colour : bright deep garnet red.
- Nose : ripe blackcurrants and sweet spices.
- Palate : deep and generous, violet, red fruits and wild blackberries from the fully mature grapes.
- Some grilled and slightly smoky notes add complexity.
